Sponge cake - very juicy and delicious

A healthy (wholemeal flour) and yet delicious sponge cake that tastes fresh and juicy. This cake is simply and quickly stirred together and baked when you have all the ingredients in the house.

ingredients

  • 4 eggs
  • 200 g of brown cane sugar
  • 1 pck of vanilla sugar
  • 100 ml rapeseed oil
  • 80 ml of milk (1.5%)
  • 230 g spelled wholemeal flour
  • 1 pck of baking soda
  • 2 sour apples
  • 2 carrots
  • about 4 tablespoons of walnuts

preparation

  1. Preheat the oven to 170 degrees (convection!).
  2. Beat the eggs, cane sugar and vanilla sugar until foamy, pour in the rapeseed oil slowly while stirring, as well as the milk. Then stir in the wholemeal spelled flour and mix well (keep about 2 tablespoons of it and mix with the baking powder).
  3. Add the grated apples and carrots and the coarsely crushed walnuts.
  4. Finally, add the remaining flour with the baking powder to the dough with stirring.
  5. Put everything in a greased box or springform pan and put it into the preheated oven.
  6. The baking time is about 40 minutes (please make a stick sample!)
  7. The cooled cake can still be sprinkled with icing sugar or coated with chocolate icing.

Another tip: You can also bake the cake a few days before the planned consumption, because it still pervades over time and always tastes better!
