This refined stew in the African style, succeeds easily and tastes excellent.

ingredients

For four servings

  • 2-4 stems of coriander fresh
  • 2 tbsp Berbere (African spice) Harissa goes too
  • 1 lime
  • salt
  • 300 g red onions
  • 400 g of sweet potato
  • 2 plantains
  • 300 g of fresh tomatoes
  • 2 tablespoons of peanut oil
  • 1/2 L vegetable stock
  • 400 g of tomatoes happened
  • 1 can of coconut milk 400 ml

preparation

  1. Clean the onions and dice them roughly, clean the batatoes and dice them roughly, peel the plantain and cut into thin slices. Also roll the tomatoes roughly.
  2. Heat the peanut oil in a larger saucepan and let the onions turn glassy, ​​add the potatoes and continue to simmer, then add the banana, simmer for a while, then add the tomatoes.
  3. Add the broth, the coconut milk and the passed tomatoes. Season with salt and Berbere. Simmer for about 20 minutes.
  4. From the lime rub the shell, then halve and squeeze the juice. Remove the coriander from the stems and mix everything under the stew after the cooking time.
  5. Taste again and then good hunger.
