The stuffed avocado with salmon and egg from the oven is super easy and fast made and is suitable as a starter, but also as a hearty breakfast or low carbohydrate dinner.
Ingredients (for 2 servings)
- 1 avocado
- 2 slices of smoked salmon
- 2 eggs
- Some grated cheese
- salt and pepper

- Preheat the oven to 150 ° C.
- Halve the avocado, remove the core and enlarge the holes with a spoon.
- Season the two halves and add some grated cheese to the pits.
- Now put the salmon in the holes.
- Next, beat the eggs in a bowl and add the yolks to the smoked salmon. You can do as much protein as you can (so it does not overflow) and use the rest differently.
- Season again and sprinkle some grated cheese over the stuffed avocados.
- Bake the avocado halves on a baking tray for about 18-20 minutes.
For avocado lovers like me a super delicious little dish that is also very filling. As a starter is half a person per person - for breakfast or dinner, for example, you can eat well both halves of the stuffed avocado.
