The stuffed avocado with salmon and egg from the oven is super easy and fast made and is suitable as a starter, but also as a hearty breakfast or low carbohydrate dinner.

Ingredients (for 2 servings)

  • 1 avocado
  • 2 slices of smoked salmon
  • 2 eggs
  • Some grated cheese
  • salt and pepper

preparation

  1. Preheat the oven to 150 ° C.
  2. Halve the avocado, remove the core and enlarge the holes with a spoon.
  3. Season the two halves and add some grated cheese to the pits.
  4. Now put the salmon in the holes.
  5. Next, beat the eggs in a bowl and add the yolks to the smoked salmon. You can do as much protein as you can (so it does not overflow) and use the rest differently.
  6. Season again and sprinkle some grated cheese over the stuffed avocados.
  7. Bake the avocado halves on a baking tray for about 18-20 minutes.
