Stuffed chicken breast - sorpresa on salad

? Sorpresa? means surprise in Spanish. I call this dish so because it has typical Spanish or Latin American ingredients. And because one can only guess what the filling consists of.

Ingredients for 2 servings

  • 2 chicken breast fillets (approx. 170 g each)
  • 1 delicious avocado
  • 1 egg
  • 2 cm of a leek rod
  • 2 slices of dried tomatoes
  • 2 cherry tomatoes
  • 3 large green olives filled with jalapenos
  • 1 tbsp student food (nut mixture with raisins)
  • 2 handfuls of iceberg lettuce
  • 1/2 cucumber
  • some leaves of parsley
  • 1 pinch of cumin
  • 1 pinch of garlic powder
  • 1 tbsp thistle oil
  • 1 tbsp white wine vinegar
  • salt and pepper

preparation

  1. Cook the egg hard for 10 minutes, quench and peel.
  2. Chop up dried tomatoes, cherry tomatoes, olives, egg, leek and parsley.
  3. In a bowl with a fork, crushed avocado, chopped dried tomatoes, cherry tomatoes, olives, egg, leek, parsley and trail mix well. Season with some cumin, garlic powder, salt and pepper.
  4. In the chicken fillets with a knife laterally each cut a bag and fill with this mass.
  5. Bake the stuffed meat for 30 minutes at 200 degrees in the tube. The times in common recipes for stuffed chicken breasts differ from mine - I personally the given baking times are much too short.)
  6. Meanwhile, roughly rake the iceberg lettuce and slice the cucumber. Put the two ingredients on a plate, sprinkle with vinegar and oil, mix well and season with salt and pepper.
  7. Put the stuffed chicken breasts on the salad.
