Stuffed herring rolls

The recipe is for 2 people, and that

- 6 fillet of matese (preserved), e.g. from Aldi
- 1 tbsp. of fraiche and sour cream each
- 1 1/2 tablespoons grated horseradish (or glass)
- 1 tbsp lemon juice
- 1 tsp sugar
- a little salt and pepper
- 2 apples roughly grated (on the vegetable grater)

Rinse off the matjes and pat dry, then gradually mix the above ingredients, add the grated apples to the cream and spread the matjes fillets, then roll them up and serve. It fits to fresh little jacket potatoes or a side dish to taste. Simply delicious, even for a fish buffet a real asset.
