Stuffed zucchini - vegetarian and delicious

Today I had this great vegetarian dish: zucchini stuffed with feta cheese, onions and walnuts and baked in the oven. The dish is easy to prepare and tastes really delicious!
ingredients
- 2 zucchini (medium size, not too thin)
- ½ onion
- 3 cloves of garlic
- 100 g sheep's cheese / feta
- 1 handful of walnuts
- 1 handful of fresh bread (soft)
- 1 egg
- Salt, pepper, Cheyenne pepper, garlic powder
- olive oil
preparation
- Wash zucchini, dry and cut off both ends.
- Use a knife to cut and hollow out the zucchini (see picture) so that it looks like little boats. The edge should not be too thin.
- Blanch the zucchini in salted water for about 7 minutes.
- In the meantime, finely chop the garlic cloves and the ½ onion. Coarsely chop the walnuts and finely crumble the bread, as well as the feta cheese. The remnants of the hollowed zucchini are finely chopped.
- Preheat oven to about 200 degrees.
- Heat some olive oil in a pan and sauté the onions and garlic. In addition, the zucchini cubes and are fried for 5 minutes.
- Add the bread crumbs and the roughly chopped walnuts and fry them a little, let cool slightly and then add the egg and the feta / sheep's cheese. Season with salt and pepper, add some garlic powder and cayenne pepper to taste.
- Now use a small spoon to fill the zucchini with the mass. Place as much as possible in the zucchini. It will remain a rest of the filling, which you can separately at the end of the cooking time in the oven (about 10 minutes).
- Cover the zucchini with aluminum foil, bake in the oven for approx. 25-30 minutes and bake for approx. 5 minutes after the cooking time without foil.
This fits very well rice and tomato sauce, a beautiful herb baguette, Zaziki or just nothing. :)
