Stuffed zucchini (with minced meat)

  1. Halve 4-5 medium-sized zucchinis and hollow out (keep) the pulp, place in a suitable fireproof mold.
  2. 500 g minced (at will - I take half and half) with 1 onion, salt, pepper, soaked bread roll, egg, mustard to make a puff pastry dough. So that the zucchini halves fill up. Into the oven with it (20-25 minutes)
  3. In the meantime: puree the flesh of the zucchinis with 2 knobs and place in a saucepan, add 1 box of tomatoes, season with salt, pepper, paprika and Italian herbs, bring to the boil and simmer with some sauce binder, starch or flour.
  4. Tablespoonful to the already pre-browned zucchinis. Sprinkle with Gouda or cover with mozzarella slices. Back in the oven until the cheese is melted and slightly browned (10-15 minutes)

Very tasty with rice, pasta, potatoes or just a ciabatta.
