Sunken chocolate cherry cake

Ingredients:
1 glass of sour cherries, 5 eggs, 250 g sugar, 200 g butter, juice of 1 lemon, 300 g flour, 1 pe. Baking powder, 2 teaspoons cocoa, 100 g chocolate sprinkles, 1 pinch of salt, possibly 2-3 tbsp apricot jam

Preparation:
Drain the cherries. Preheat the oven to 190-200 ° C.

Separate egg yolks and egg whites. Stir the egg yolks with the sugar until frothy. Warm the butter and add slowly, as well as the juice of the lemon. Mix flour with baking powder, cocoa, chocolate sprinkles and salt and stir in the sugar-butter mixture. Beat the egg whites until stiff and fold in gently.


Grease a springform pan or cover it with baking paper. Add the dough, then spread the well-drained cherries and lightly press.

Baking time: about 40-45 minutes at 190-200 ° C

The still warm cake can be spread with apricot jam.
