Suppli romani al telefono (Italian rice croquettes)

If you have rice, you may want to try this simple recipe for suppli al telefono:

ingredients

  • Cooked rice
  • Diced canned tomatoes
  • eggs
  • grated Parmesan
  • Mozzarella cheese, in small cubes
  • Salt pepper
  • butter
  • breadcrumbs
  • frying oil

preparation

Add the tomatoes to the rice, stir in the raw eggs, add some butter, add the parmesan, salt (if the rice is not very salty), salt.

As far as the proportions are concerned, everything should result in a not too sticky, easily mouldable rice dough.


Make croquettes with wet hands from the rice dough. In the middle of each croquette press a cube mozarella.

Roll rice croquettes into breadcrumbs and fry until golden brown.

They taste cold or warm and can be stored well chilled for several days.


PS: For the Italians and friends of Italy among us:
In the finer version, instead of ordinary rice from the day before, a fresh creamy tomato risotto freshly prepared (with tomatoes, butter, broth, melted onions and possibly some white wine - see -> Risotto), and are then formed from the Suppli.

Of course that works too.

But it works and tastes great with any kind of cooked long grain or round grain rice, and I know the recipe from Rome as a typical use of rice from the day before.

Incidentally, the croquettes are called "al telefono" because the mozzarella pulls such fine threads when they bite off, especially when the suppli are eaten warm.
