Swedish ice cream tarts with strawberries

Midsommar is approaching, for the first time in many years we will celebrate in Germany. The day is very important to us, as so many fond memories of the second highest Swedish festival are fanned out, flowers are picked in nature - the more, the better - meeting place on the fairground, tying garlands together, dressing the midsummer bar with birch green, the flower garlands and then the big moment: Strong men raise the mighty stake among the applause of all! Originally the custom comes from Germany, the maypole. ?

In Sweden I always made a big ice cream cake with strawberries, that's way too much for me and so I came up with the idea to prepare several small ice cream tarts:

Ingredients for 8 pieces

  • 125 g fresh strawberry and 8 additional strawberries (decoration ect.)
  • 170 g meringue
  • 600 ml of cream
  • 70 g of grated bitter chocolate
  • Also: 8 serving rings, blender, baking paper, blender

preparation

  1. Dab the washed strawberries dry and puree with the blender.
  2. Mince the meringues, mix with the pureed strawberries and add 70 grams of grated dark chocolate. I like to chop up a few more strawberries a bit more and give them to them.
  3. Beat the cream until stiff (without sugar!) And place under the meringue mixture.
  4. Place the organizer rings on a tray covered with baking paper, pour in the creamy meringue and then place in the TK.
  5. After about 1 hour you can deduct the Anrichteringe because the tartlets are hard enough to let them deep freeze.

Now for decoration

  1. Melt the dark chocolate in a bain-marie, add a little palmin. Then pour on a sheet of baking paper, free hand and nice and irregular. After cooling, break into pieces and pick up in a closable container. I do more and more, as I really need, then I always have decoration in stock.
  2. 10 minutes before serving, I take the tarts from the TK, make it appealing, on top come a cream blotch, half a strawberry with green, some of the Schokodeko.
  3. In the photo I have one of the small tartlets in a Papierförmchen with Erdbeereermotiv (I had still from S) prepared with some mint.
  4. These tarts can also be prepared well with blueberries and chopped mint, as well as with raspberries and white chocolate.

Who wants to make a big ice cream cake

250 g fresh berries, 350 g meringue, 1 kg cream, 125 g shredded chocolate. Lay out the bottom of a 24-welled spring cake with cling film, pour in the mixture and let it freeze for at least 2.5 hours!
