Sweet potato stew with balsamic onion topping

In the winter months, a good soup pot always goes with us. The sweet potato stew with balsamic onion topping warms and tastes also very delicious.

ingredients

The stew


  • 1 kg sweet potato
  • 1 leek
  • 220 g red lentils
  • 2 onions
  • 1 clove of garlic
  • 1 heaped EL cilantro freshly ground
  • 1.5 L vegetable stock
  • 50 g butter
  • Salt, black pepper and chilli to taste

The balsamic onions

  • 3 red onions
  • 40 g of butter
  • 60 ml balsamic

And ...

  • 6 peppercrackers
  • 15 g of chives

preparation

Mise en Place for the stew:


  1. Peel the sweet potatoes and cut into 1x1x1cm cubes.
  2. Place a knife on the leek just before the roots and pull the knife along the end of the green, so that the leeks are cut in half but still stick together at the roots.
  3. Clean the leek under running water, shake well and cut into fine rings.
  4. Skin and finely chop the onion and garlic.
  5. Finely grind the coriander in a spice mill.

The stew:

  1. In a large saucepan, fry the onions and garlic in butter over low heat in butter.
  2. Add the coriander and sauté briefly while stirring.
  3. Put the potato cubes and the leek in the pot and sauté with stirring for about 5 minutes.
  4. Pour in the stock, stir, bring to a boil and simmer gently for about 20 minutes with the lid closed.
  5. In the meantime, rinse the lentils well under running water in a sieve and after approx. 10-12 minutes give cooking time to the potato-leek mixture.
  6. Cut the peppercorners into pleasing pieces and place them in the stew just before the end of cooking.

The balsamic onions:

  1. In parallel, the red onions skin and cut into fine strips.
  2. Fry the red onions in the butter over medium heat.
  3. Pour in the balsamic vinegar and reduce to the point that there is still some liquid.

Finish:


Sprinkle the stew with chives and garnish with a portion of balsamic onion in deep plates.

Season the onions with salt and pepper.
