Sweet-sour eggs

You have (almost) always the ingredients for the sweet and sour eggs at home, it tastes and makes you full.
ingredients
- about 60 g
- Butter water, milk after feeling (about 3/4 - 1 L?)
- Salt, pepper, sugar, vinegar possibly nutmeg
- 1 tsp mustard
- 8-10 eggs
preparation
Take a nice big pot. First, prepare a classic light ground sauce:
- Butter - about 1/4 piece - melt in the pot, stir with flour, until you have a nice smooth-stirred "Pampe".
- Then gradually add cold liquid, stirring constantly, so that nothing clumps.
- I take about 3 parts of water and 1 part of milk. Add so much liquid until the sauce is creamy. You have to try the quantities.
- Season with salt, pepper, sugar and vinegar and if necessary add mustard and a little nutmeg.
- Now carefully place the eggs in the sauce, preferably beat them individually into a cup (if one is bad) and allow to stand for about 1 minute.
- Then stir slowly and carefully so that the yolks do not break completely (except for 1-2, gives a nice yellow color).
- There are classic boiled potatoes.
