Swiss Bürli - delicious crispy bread rolls

Bürli - Swiss rolls - tasty and crispy.

ingredients

For 9-10 rolls

  • 400 g wheat flour (type 405)
  • 100 g rye flour (type 1150)
  • 1/2 cube of yeast
  • 2 teaspoons salt
  • 340 ml of running water

preparation

  1. In a large bowl (dough is about 1 1/2 times!) To flour, in a trough with a pinch of sugar, the yeast crumble, pour 40 ml of lukewarm water and let it go for a few minutes.
  2. Then salt and the remaining water (300 ml) to knead and with the dough hook to a smooth dough.
  3. Cover the dough with cling film and let it rest in the refrigerator for about 10 to 12 hours (eg over night).
  4. Preheat oven to 250 degrees (top / bottom heat).
  5. Take the dough out of the fridge (do not knead it!) And divide 9 pieces of dough with a large spoon or spatula.
  6. Place on a baking sheet lined with baking paper (I bake all my bread on a pizza stone, who has one the better). Bake for 20 - 23 minutes.

Take out and enjoy the fresh, fragrant, crispy bread rolls!

Until the breakfast table is set, the rolls are ready, without much effort.
