Tabbouleh

The "taboule" is a kind of couscous salad, very refreshing and should be prepared the night before, at the latest in the morning of the same day, as he has to draw a long time.

The ingredients for a medium bowl (sufficient for about 4 - 6 people) are the following:

  • 150 g couscous (uncooked)
  • 2 peppers (two different colors for visual reasons)
  • 1 onion
  • 1 cucumber
  • 1 - 2 tomatoes
  • pitted olives ("nature", in lake or oil, I usually take about a cup full)
  • salt
  • about 2 tablespoons oil
  • chopped, fresh mint (about 1/2 bunch)

Preparation:


First you gut tomatoes and cucumber and then dice them finely (about 0.5x0.5cm). Then you go with the pepper just like that. You also chop the onion fine. And the olives do not spare her, but they may also stay a bit bigger (just not in one piece, because that would definitely be too big).

Mix all this with the couscous, the chopped mint, the oil and a pinch of salt and let it stand for the first time, preferably overnight. The vegetable juice slowly softens the dry couscous and gives it flavor.

If the couscous is soft enough, stir the taboule vigorously again and taste it again if necessary with a little salt and pepper. In the refrigerator, the whole thing is about 2 days shelf life - and I personally think that it tastes better, the longer the salad may pull through.
