Tasty seasoning homemade

The TV chef Alexander Herrmann and my "Muddi" gave me the idea. His recipe for a different seasoning is here, too.

It's not a hard thing. Take 500 - 750 grams of bone, which the butcher cuts and chops into manageable pieces. Pot of water, about 2 liters, onions, salt, pepper (actually everything is pretty much optional), definitely "a boar Lobberbladdl", greens, briefly boil, and then without "blubber bubbles" reduce. This is the simplest but not the best method.

Do not be scared: This does not smell delicious at first. If you want, you can boil the bones for a short time, pour this water away and then apply it again, preferably cold. Alternatively you can sear the bones and the marrow for a short time.


After reaching the 100 ° C limit, the temperature of the water should be kept slightly lower in terms of temperature, so that the whole thing slowly reduces slowly.

Then, when the broth has enough flavor and this soapy odor has disappeared, you have a very concentrated broth. This is finely screened and placed in a flat container. This should be TK-ready because the broth is then frozen. It makes sense to wait a bit with the freezing so that the cooling unit does not have to work overtime.

After freezing, you then have a "broth biscuit" that you can still share well with the knife because of its fat content. Ice Cube Tray goes too. Or the "biscuit" in a freezer bag and * schebber * briefly against hewn, ... it all works, only the frog hops ...


If you now have to resort to leavening sauces or soups, you can breathe this with a few pieces of this frozen concentrated brothel a whole new life.

It makes perfect sense to add the spices just before the end. The hard spices (peppercorns, juniper berries) earlier, ingredients with essential oils until just before the end, because we want the flavors in the soup and not in the fume hood.

The advantage is that this procedure does not take as long as the oven method and the essential oils are largely retained. Calculates about 3 hours. But it's worth it!
