This cheesecake even like cheesecake muffle

I did not like a cheesecake for a long time, until a colleague arrived with a very similar cheesecake, unfortunately she did not want to tell me this, as it is a family recipe. Luckily I found this recipe after a long search and everybody is thrilled with this cheesecake.

ingredients

For the short crust pastry:

  • 300 g of flour
  • 200 g butter
  • 100 g of sugar
  • 1 Msp. Baking powder
  • 1 pinch of salt
  • Fat for the mold

For the cream:

  • 800 g yoghurt 10% fat
  • 200 g mascarpone
  • 200 ml of cream
  • 150 ml of milk
  • 110 g of sugar
  • 2 pck vanilla sugar
  • 60 g cornstarch
  • 1 pinch of salt
  • 5 eggs
  • a little lemon juice

preparation

  1. For the cream the day before yesterday to drain on a sieve with kitchen paper.
  2. From flour, butter, 100 g of sugar, salt and baking soda knead a short crust pastry. Put the dough covered in the refrigerator.
  3. Cook a thick pudding with milk, cream, 110 g sugar, vanilla sugar and 30 g cornstarch: heat the milk and cream in the saucepan. Add the vanilla sugar and the sugar. Mix the remaining 30 ml of milk with the 30 g of cornstarch.
  4. Remove the pot from the heat and stir in the cornflour. Stir until the pudding starts to solidify. Put the pudding aside and allow to cool.
  5. When the pudding has cooled, whip up with a hand mixer. Add the eggs one at a time and beat them. Mix the rest of the cornstarch with 2 tablespoons of lemon juice and add with the salt and continue stirring. Combine yoghurt and mascarpone and then fold in.
  6. Briefly knead the shortcrust pastry and place in the greased springform pan. Press the bottom flat and pull up one edge. Put the cream on the floor.
  7. Bake the cake at 160 ° C top / bottom heat on the middle rack for about 70 minutes. So that it does not get too dark, cover the cake with aluminum foil halfway through the time. After the baking time, switch off the oven, but do not open and let the cake cool in the oven.
