Tiramisu for diabetics

ingredients

  • 1 three-pieced cake bottom (instead of the sugared spoon bisquits)
  • 500g of mascarpone
  • 1/4 teaspoon of stevia powder (Stevia is sold in Germany as a "bath additive" or similar in health food stores or drugstores - if at all)

The best way to get stevia is via the internet. It is 300x sweeter than sugar, has no calories, but is a pure natural product (honeywort), which for understandable reasons (sweetener manufacturers of course see the competition!) As food in Europe is not yet approved. Hence the "camouflage". Please use it carefully ... rather take a little less than too much and always try it, so that it is not too cute! It is PURE NATURE - NO SWEET!

  • 3 slices of clear gelatine
  • 3 eggs
  • 4 cl brandy (also Frangelico or Amaretto if you like)
  • freshly brewed espresso
  • cocoa powder

Preparation:

Dissolve the gelatine in cold water. Cook espresso. Then mix espresso with 2 cl brandy. Separate the individual trays of the 3-fold cake tray. Separate the egg yolks from the 3 eggs from the egg whites.

Preparation of the mass:

Place mascarpone, egg yolk, 2 cl brandy, stevia powder in a mixing bowl and mix to form a homogeneous mixture. Then mix in the gelatine - which will prevent the cake from divergence immediately when it comes out of the freezer. Tiramisu is indeed a "Semifreddo" product, so something semi-frozen.


Completion of the cake:

Now spread the first pie base with the espresso / brandy mixture (best with a slightly wider brush). On it the first layer of the prepared cream. Just repeat the whole thing twice and then sift cocoa powder over the finished cake.

Now in the freezer with it. You should at least 2 hours before eating out there again and put in the refrigerator, then it has the right consistency at the desired time.

PS: Sorry to all diabetics: Of course you have to pay attention to your BE, but by 1) no spoon biscuits are used, which contain extremely much sugar and 2) the additional sweetness needed was replaced by Stevia, has the whole thing but already relativized.
