For many years, I have processed our sweet cherries quickly and easily. Wash cherries and stalk (do not de-corer!), Fill in jar or screw jars, then

a) non - alcoholic variant: prepare red fruit tea and sugar well / also grape juice - or
b) variant containing alcohol: make mulled wine or heat up the finished mulled wine briefly, then add sugar.

Pour the appropriate liquid over the cherries, close the jars, place in a beaker and fill with enough water so that the glasses stand in the water just below the edge of the lid. Now bring the contents of the pan to a boil, until pearls rise in the jars, leave to rise for a further 30 minutes at 80 ° C in a closed pot.

I let the glasses cool in the jar and label them the next day accordingly. I set the wake-up pot on the terrace. So the water vapor is not in the apartment.
