Tomato cream sauce

You need: 1 medium onion, 1 cup cream, tomato paste, salt & pepper, a little butter

1. Remove onion and dice
2. Sweat the cubes in frothy butter until they are glassy (do not put the plate too hot)
3. Pour in cream and bring to a boil briefly
4. Whisk the cream and onions through a sieve into another saucepan
5. Dispose of onions (were only for the taste), simmer cream over low heat, add tomato paste and stir until the color is nice and rosy
6. Season with salt and pepper
