Tomato soup with real tomatoes

After finding many ideas for a simplified tomato soup, I would like to introduce the original tomato soup. And all those who make the effort to boil this soup will know why it is sometimes worthwhile not to grab the can or the juice.

Now the good tomato time starts again, on the market there is a single stall selling the cheap soup tomatoes. They are a bit shriveled, partly soft but wonderfully spicy. 1 kilo for 2? - that's enough for a soup for 2 people.

Here is my recipe for 4 people:


ingredients

  • 2 kilos of soup tomatoes
  • 2 onions
  • olive oil
  • Salt, pepper and basil
  • a pinch of sugar (or 1 teaspoon of honey)

preparation

Cut the soup tomatoes crosswise and bring to a boil in water until the peel dissolves. Remove the pot from the heat and let it cool until it is best to touch the tomatoes by hand. This is the best way to peel off the peel and discard green hard spots.

Dice the onions and fry them with olive oil on a small scale, then add the tomato pulp. Very sparingly with sugar or sweet honey, this completes the tomato taste very well. You can now spice it up, I prefer the given variety, sometimes I like to add some garlic. The soup should simmer for about 20-30 minutes.

Finally, everything is mashed fine with the magic wand and so creates a very fine real tomato soup. When serving you can still do a teaspoon crème fraîche in the soup and then stir this with a fork once, then there is a little pretty white momentum in the red soup. Then a nice basil leaf on top, because the eye eats as you know.

There are just dry baguette or ciabatta, if it's just a starter, it's enough for more people.

Well, by the skinning of the tomatoes it looks like a lot of work, if I have little time, I also open a can. But with the fresh tomatoes you make even from such a simple simple recipe something really delicious, I just say that the effort is worthwhile now and then.
