Tuna Melts - favorite low carb recipe

Dear Low Carb Fans, I have here for you an (almost) carbohydrate free recipe that you should absolutely try.

It's healthy, the ingredients do not cost much and the dish is just super delicious and filling. Try it :)

ingredients

  • 2 zucchini
  • 2 tbsp olive oil
  • 1 can of tuna
  • 1 stick of celery
  • ¼ of a medium sized red onion
  • 2 tablespoons of lemon juice
  • ¼ tsp dried dill
  • 2 tablespoons of pine nuts
  • 200 g of feta
  • 100 g of Parmesan

preparation

  1. Preheat the oven to 200 ° C (circulating air). Lay out a baking sheet with parchment paper.
  2. Divide the zucchini along and scrape the inside with a teaspoon (scraped inside do not throw it away!), the zucchini halves with a tablespoon of olive oil and fry for 15-20 minutes in the oven until they tan slightly.
  3. Mince the inside, mix with the tuna, the celery cut into fine rings, the chopped onion, the dill, the remaining olive oil, the pine nuts and the lemon juice.
  4. Rub the parmesan and crumble the feta. Remove the zucchini halves from the oven, fill with the tuna mixture and add the cheese.
  5. Switch the oven to grill mode and put the zucchini halves back into the oven for a few minutes until the cheese is browned and crispy.
