Mairübchen, some also know her under the name "Teltower Rübchen", are currently my absolute favorite vegetables. They taste similar to kohlrabi, but milder and gentler. Here is my tip: a Mairübchen puree for four people.
preparation
- Peel 800 g of Mairübchen and cut into chunks, boil with 200 ml of water in a closed pot for about ten minutes.
- With 100 ml of fresh whole milk (no UHT milk, which has such a funny aftertaste), roughly puree some salt and freshly ground black pepper (amount to taste).
- Sprinkle with chopped fresh watercress or chives before serving.
- Go well with boiled potatoes. In my opinion, a really fine, light and digestible spring recipe!
