Mairübchen, some also know her under the name "Teltower Rübchen", are currently my absolute favorite vegetables. They taste similar to kohlrabi, but milder and gentler. Here is my tip: a Mairübchen puree for four people.

preparation

  1. Peel 800 g of Mairübchen and cut into chunks, boil with 200 ml of water in a closed pot for about ten minutes.
  2. With 100 ml of fresh whole milk (no UHT milk, which has such a funny aftertaste), roughly puree some salt and freshly ground black pepper (amount to taste).
  3. Sprinkle with chopped fresh watercress or chives before serving.
  4. Go well with boiled potatoes. In my opinion, a really fine, light and digestible spring recipe!
