Yesterday, we had cooked cauliflower as a vegetable accompaniment. Today there were three medium-sized florets left, more like roses. I'm reluctant to throw away food. So I was looking for a remainder recovery recipe for it. And also found one, but it nevertheless proficiently modified.

- boiled cauliflower rest (it was about 250g), finely chopped (I shredded it even on the grater ")
- 2 egg yolks
- 2 coated EL Semmelle crumbs (breadcrumbs)
- 1 tbsp cornstarch (cornstarch)
- (I still had a few spoonfuls of mashed potatoes from the previous day and mixed them with pure, but it does not have to be!)

Prepare a dough that may be pulpy. Then with the help of a tablespoon or ice scraper form small, elongated piles, then turn them into breadcrumbs and bake in plenty of oil crispy at a higher temperature. I left the croquettes in the oil for a good 5 minutes.
Then degrease on kitchen paper. These meatless croquettes can be eaten hot or cold.
If you like, you can also make a dipping ". I mixed natural yoghurt and quark, with a pressed clove of garlic and a piece of grated cucumber, seasoned with salt and pepper and then the kroketten pure typed.

Surely you can also use other vegetable remains so, if necessary, lower-fat than baking cookies. Trying out is in a good mood!
