Vanillekipferl without egg and without nuts

In keeping with the pre-Christmas period, I share another Kipferl recipe with you. This is also suitable for vegans and nut allergies AND totally easy:

ingredients

  • 200g margarine (or butter if you prefer)
  • 100g sugar
  • Half a vanilla pod (or a packet of vanilla bread or similar)
  • 100g ground almonds (if you are nuts, you can also use 50g almonds and 50g hazelnuts)
  • 260g of flour
  • vanilla sugar
  • powdered sugar

preparation

Knead ingredients for the dough with your hands until everything is smooth and well distributed. With the hand mixer, there are only crumbs. Wrap the dough in plastic wrap and refrigerate for half an hour.

Then roll a 2 cm wide "sausage" out of the dough and form pieces of 2 cm each into moons. Place these moons on a tray lined with baking paper (preferably with a low rim) and bake in a preheated oven at 190 ° C for about 10 minutes.

The Kipferl are ready when they are light brown; when cooling, they are still a little firmer. (Our oven takes a lot longer, but that's the way it is.) If you have a brand new oven, check back sooner.)

Remove the kipferl with the baking paper from the hot tin and let it cool a bit. Mix icing sugar and vanilla sugar and roll the still warm kipferl in it.
