Variation of potato salad

I was on a chat with my neighbor this morning. By the way, she prepared potato salad as she knew it from her mother.

It was so delicious that I asked for permission to put the recipe in here. I got permission and here is the recipe:

ingredients

  • Cook and peel 1 kg of firm potatoes
  • about 1/4 L broth (poultry or vegetable broth)
  • 2 tablespoons vinegar
  • 1 bunch of spring onions
  • 2 tablespoons sweet cream
  • salt and pepper
  • a little clarified butter or oil

preparation

  1. When the potatoes are lukewarm, cut into thin slices.
  2. Cut the spring onions into fine rings and fry in a pan with a little oil or clarified butter.
  3. Then add the broth and the vinegar.
  4. Remove from heat and let cool slightly. Then slowly pour over the potatoes and mix gently.
  5. Pepper and salt, and finally add the cream.

This recipe is also suitable for diabetics!
