Variation of potato salad
I was on a chat with my neighbor this morning. By the way, she prepared potato salad as she knew it from her mother.
It was so delicious that I asked for permission to put the recipe in here. I got permission and here is the recipe:
ingredients
- Cook and peel 1 kg of firm potatoes
- about 1/4 L broth (poultry or vegetable broth)
- 2 tablespoons vinegar
- 1 bunch of spring onions
- 2 tablespoons sweet cream
- salt and pepper
- a little clarified butter or oil
preparation
- When the potatoes are lukewarm, cut into thin slices.
- Cut the spring onions into fine rings and fry in a pan with a little oil or clarified butter.
- Then add the broth and the vinegar.
- Remove from heat and let cool slightly. Then slowly pour over the potatoes and mix gently.
- Pepper and salt, and finally add the cream.
This recipe is also suitable for diabetics!
