Vegetable diet soup with nutritional tips
Tastes very spicy, delicious and is also very healthy due to the vegetables.
For about 5 L soup you need:
ingredients
- 1 thick onion
- 2-3 leeks, depending on the strength
- 6 carrots
- 1 piece of celery or 1/2 celeriac and a few stalks of celery
- 500 g TK broccoli - that's faster
- 2.5 L vegetable broth (preferably the organic instant or home-made)
- A large soup pot or even better still pressure cooker
preparation
Cook the onion, carrots, celery and leek in the pressure cooker for about 3 minutes, otherwise 5 minutes.
Add 2 bay leaves, pepper and fresh thyme or alternatively 1 teaspoon dried thyme.
Puree the whole thing and then add the peppers and broccoli in fine florets and cook everything again for about 5 minutes (about 3 minutes in a pressure cooker).
Season with chili and salt, if necessary add salt.
I have mashed the soup, then it is creamier and you do not need to mince the vegetables so much.
Divide the soup into 5 equal portions, one for the first day, the rest for cold or freezing.
Tips:
In the morning: you can actually eat what you like, of course, do not overdo it and eat too rich in fat, but a cereal or a Körnerbrot- / bread rolls with toppings are o.k.
Noon: (always carbohydrates)
At noon to the soup: carbohydrates
50 g whole wheat pasta or 1 serving (425 g) cooked potatoes or 75 g rice or red lentils
In the evening (always protein) with the soup: Roast 200 g of chicken breast fillet in a non-stick pan or cook in a little broth or 250 g of lean fish fillet.
No carbohydrate meal after 3:30 pm!
Important: Drink 2.5 L of fruit tea or herbal tea or, preferably, still water throughout the day.
If you are still hungry in the evening, a piece of low-fat cheese does not hurt.
You miss nothing at this diet, is full and satisfied, if in the afternoon a little appetite is there, I ate a persimmon, some pineapple or an apple, did not hurt me.
I did not want to lose a few kilos in record time, but after 2 weeks I'm 2.5 kilos lighter, feel well and I'm not yet sorry for the soup.
Incidentally, during the second week I also replaced a soup meal with a grilled beef steak and a big salad.
