Vegetable pan with kohlrabi, zucchini and apple

This Vegetable Pan Recipe fits my tip - Utilize leaves, stems, herbs and peel of vegetables? Here, kohlrabi and zucchini are used completely.

Ingredients for 3 servings

  • 2 big kohlrabi
  • 2-3 zucchini (about 500 g)
  • 1 onion
  • 1 clove of garlic
  • 1 apple
  • some clarified butter or vegetable oil
  • salt and pepper
  • Paprika spice
  • some nutmeg
  • about 200 ml vegetable broth
  • fresh parsley and sour cream as desired

preparation

  1. The kohlrabis are washed, the stem is cut off and the leaves are separated from the tuber. Then the kohlrabis are cut unpeeled into bite-sized pieces and the leaves and stems are also cut into small pieces.
  2. The washed zucchini are also cut into small pieces, the unpeeled apple is quartered, freed from the core and cut into small cubes.
  3. Peel the onion and garlic clove, cut the onion into small cubes and finely chop the garlic.
  4. Ghee or oil is heated in a large, coated pan and lightly browned with onion and garlic while stirring.
  5. Now add the kohlrabi pieces and stalks and heat everything under medium heat for about ten minutes.
  6. Then add the zucchini and apple pieces and kohlrabi leaves as well as the vegetable broth. Season it to taste with salt, pepper, paprika and nutmeg and simmer for another ten minutes over moderate heat, stirring always - done!
  7. At will, the dish can be refined with some sour cream and sprinkled with fresh parsley.
