(Vegetable) remainders

If you have organized a party buffet, you have from all the ingredients that has been used for beautification (mushrooms, tomatoes, peppers, pickled cucumbers ...), left behind a lot of leftovers.

A lot of everything, but again not so much that could make a full meal from each vegetable.

How about my suggestion to make an omelette with a vegetable pan? One is astonished, what everything fits together in the end!

So: fry the vegetables with a chopped onion in olive oil and season to your own liking (salt, pepper, paprika, chili ...). Prepare an omelette for each eater, sprinkle with vegetables, maybe some parsley, then just fold it up. A salad is of course nice.

It has become a stand-alone food for me. I like to add red beans and season well. As an alternative to the omelet, I also use fried tofu cubes.
