Vegetarian Pumpkin Quiche

  • 200 g of flour
  • 100 g of butter or margarine
  • 60 ml of water
  • 1/2 teaspoon salt
  • 1/2 Hokkaido pumpkin
  • 1/2 L vegetable stock
  • 1 bunch of spring onions
  • 1/2 roll of goat's cheese
  • 2 eggs
  • 1 cup of cream
  • 50 g of grated cheese
  • Pepper, salt, nutmeg

Make a kneading dough from flour, butter, salt and water and chill for a short time. Then cover a quicheform or springform with it, push up edge. Pierce the dough with the fork several times.


Trigger the dumplings, dice them and sauté in 1/2 l vegetable stock for about 15 minutes. Drain, use broth later otherwise. Spread pumpkin on the dough. Wash and cut spring onions and spread on top. Cut the goat's cheese into thin slices and place over it.

Mix eggs, cream, pepper, salt, nutmeg and pour over the quiche. Do not salt too sparingly, because no ham is used. Then sprinkle the grated cheese over it.

At 200 °, the whole thing is baked in the oven nice golden brown (about 30 minutes).
