Versatile shortcrust pastry - for salty and sweet pastries

A shortcrust pastry is easy to make and goes very well with fruits and vegetables, it is also the dough of choice in combination with quark and various cheeses.

The dough is at least shelf-stable in the fridge for two weeks - so you can make a supply of dough long before a party, which you can then briefly occupy or form into various pastry pieces.


It is greasy and therefore a delicious flavor carrier that melts on the tongue. A short pastry is very soft and should be placed on a cold surface, e.g. kneaded with cold hands on a glass cutting board.

How to get your hands cold? Provide a bowl of ice cube water and dip your hands into it.

For 1 cake or two round pies


  • 500g flour
  • 200 g butter
  • 1 teaspoon Baking powder
  • 2 eggs
  • for a sweet cake 150 g of sugar
  • for a salty 1 tsp salt

preparation

  1. Pour the flour plus baking powder on a large board, press a crater into the middle.
  2. Whisk the eggs and pour into the crater.
  3. Sprinkle the sugar or salt over it.
  4. Half an hour before taking the butter out of the fridge, weigh it and distribute it in small pieces over the mixture. "Hacking" with a knife.
  5. And now quickly squeeze more with the already mentioned cool hands than knead. You hold your hand flat and make a stroking motion, through which the butter is incorporated into the dough. This sounds difficult, but it's just a matter of practice. When it holds together, form the dough into a ball and place in a bowl, cover with foil and place in the fridge for an hour.
  6. Then the dough can be processed as desired.

For example, roll out on a baking sheet lined with baking paper and top with apple slices and almonds. Then add a mixture of cinnamon sugar and bake at 180 degrees for about 45 minutes.

Or you fill the salty dough with a mixture of mushrooms and onions, mix two eggs with 300 g quark and 100 g of grated cheese, pepper and salt and bake this also in about 40 minutes golden brown.

If you pick up the dough in the fridge, you have to take it out for half an hour before processing - otherwise it is too hard and crumbly.

And of course you can also fill the dough in small molds and bake - that's much faster - it takes about 20 minutes for fruit tart, until they are brown and through.
