Vitello Tonnato with chicken breast fillet

Total preparation time: 35 min.
Here's a starter that you can prepare well. The original is veal, I prefer chicken breast: Vitello Tonnato with chicken breast.
ingredients
- 2 large chicken breast fillets (about 300 g)
- 1 stick of leek
- celery
- 1-2 carrots
- 1 onion
- 1 Knofi
- In each case a few peppercorns, allspice, cilantro and 2 bay leaves
- possibly 1 tbsp chicken broth
- Sprinkle lemon into the prepared broth
- marjoram
preparation
Dice the vegetables roughly and bring to the boil with the spices in broth. Cook the spicy chicken breast fillets in the pressure cooker for about 4 minutes or let them simmer for about 15 minutes (do not cook). Marjoram on top and stand in the broth overnight and allow to cool.
For the sauce:
- Approximately 250 g Miracel light or similar (but is a lot!)
- 200 g tuna without oil
- 2 tsp capers
- 2 anchovy fillets (rinsed)
- Some lemon juice
- Pepper and salt, pinch of sugar
- a few basil leaves
Puree everything - possibly add a dash of olive oil. Possibly. add some capersud.
Lay the meat in thin slices in a fan shape and dab with the marinade (in a plastic bag with spout) to show the remaining marinade.
To decorate, turn basil, large capers and a few slices of lemon, sprinkle a little red crushed pepper berries over it.
