warm potatosalad

Since it popped it up to post here his "own" potato salad recipe, please, mein's:

preparation

  1. Cook 1 - 1.5 kg of solid potatoes, peel hot (I'll scare them off in cold water, but this discussion already exists in parallel ...) and cut into slices (do not have to be filigree).
  2. 250 g (pi x D) thin bacon / beef jerky into thin strips or cubes, in the pan in a little oil (the amount you have to estimate the fat content of the pancetta, which still gives off) fry crisp.
  3. 2 diced onions and 1 clove of garlic, finely chopped / grated / chopped and lightly sautéed. Deglaze with about 1/2 L spicy broth, a little coarse pepper, 1 - 2 tablespoons mustard and possibly a little salt and about (depends on the vinegar) 1/8 - 1/4 L of good vinegar.
  4. Bring it to a boil for a short while, then pour it over the potato slices (they are allowed to swim a bit at first, they absorb the broth well). Just fold carefully and, at best, let it rest overnight, but at least 3-4 hours.
  5. The lettuce is served lukewarm (if it was very cool, it can be brought to the right temperature at Auftaustufe in the microwave) and sprinkled with the green of spring onions (here called the Schlodde).
  6. Tastes like bratwurst, prawn or even solo heavenly! And keeps well.
