  • 1/8 l lukewarm whey
  • 1 tsp honey

  1. Crumble the yeast into a small bowl, add honey and lukewarm whey and stir with a whisk until the yeast has dissolved.
  2. Add 900 g whole wheat flour (but you can also take spelled flour or rye flour) in a larger bowl and mix with 1 liter of sea salt and 450 ml of whey.
  3. Add the dissolved yeast and knead with the kitchen machine (dough hook) or with your hands.
  4. Let the dough cover covered for 30 minutes.
  5. Preheat the oven to 180 degrees.
  6. Put the dough in a larger, greased tin box. But you can also make a loaf of bread.
  7. I have only a small box shape, so I have a shape and next to it, baked on the grid lined with baking paper loaf.
  8. The baking time is 60 minutes (middle bar).
  9. Then you have to immediately take the box shape out of the oven, throw the bread (hot) out of the mold, brush it with cold water and put it back into the oven's oven. Brush the loaf with cold water as well.
  10. Turn off the oven and allow the bread to cool. It can quietly cool for 1.5 hours in it.
  11. Whey is in powder form and you dissolve the appropriate amount according to the package instructions.

The bread also works with skimmed milk powder and is very digestible.
