Wild garlic cream soup

Wild garlic is spring time and you can also in the kitchen, z. B. with a wild garlic cream soup, attuned to the spring. The soup I would like to introduce you to is easy and quick to prepare.
ingredients
- 300 g wild garlic roughly chopped
- 1 large onion finely chopped
- 4 garlic cloves finely chopped
- 500 ml of water
- 500 ml of milk
- 1 vegetable soup cube
- About 200 ml of cream beaten
- 1 tbsp oil
- 1 tbsp butter
- 2 tablespoons flour
- a bit of salt
- some white pepper
preparation
- Heat the butter with the oil and fry the onion and garlic until glassy.
- Add the flour and lightly toast.
- Pour with the milk and water, stirring with a whisk, so that no lumps form and add the soup cubes.
- Simmer gently until the soup turns creamy.
- Add the chopped wild garlic and cook for a short time.
- Purée with a hand blender, season with salt and pepper and serve with a dollop of whipped cream.
- As an alternative to flour, you can also cook diced, floury potatoes in the soup and then, if soft, puree. Of course, this takes a little longer and I therefore prefer the variant with the flour.
