Wild garlic cream soup

Wild garlic is spring time and you can also in the kitchen, z. B. with a wild garlic cream soup, attuned to the spring. The soup I would like to introduce you to is easy and quick to prepare.

ingredients

  • 300 g wild garlic roughly chopped
  • 1 large onion finely chopped
  • 4 garlic cloves finely chopped
  • 500 ml of water
  • 500 ml of milk
  • 1 vegetable soup cube
  • About 200 ml of cream beaten
  • 1 tbsp oil
  • 1 tbsp butter
  • 2 tablespoons flour
  • a bit of salt
  • some white pepper

preparation

  1. Heat the butter with the oil and fry the onion and garlic until glassy.
  2. Add the flour and lightly toast.
  3. Pour with the milk and water, stirring with a whisk, so that no lumps form and add the soup cubes.
  4. Simmer gently until the soup turns creamy.
  5. Add the chopped wild garlic and cook for a short time.
  6. Purée with a hand blender, season with salt and pepper and serve with a dollop of whipped cream.
  7. As an alternative to flour, you can also cook diced, floury potatoes in the soup and then, if soft, puree. Of course, this takes a little longer and I therefore prefer the variant with the flour.
