Wild Garlic spread

Spring is approaching and with it the wild garlic season. For a long time, wild garlic lived a shadowy existence until it experienced a renaissance a few years ago.
Although in the old monastery kitchen wild garlic was always already popular - and also as a remedy for joint pain one took often a Bärlaucharmbad, or foot bath. Also used wild garlic paste to brush your teeth with inflamed gums.
But now for the recipe:
preparation
- We take 1/4 pound of butter, which we beat slightly frothy. Then we give 1 pound of cream quark, salt and pepper and then a good handful of wild garlic, which we have finely chopped before.
- If you want a bit more saturated, then you can either add some cream or a few drops of olive oil.
- The whole is stirred well and you have a wonderful spread, for example. on roasted farmhouse bread or as a dip for vegetable strips.
- Holds in the fridge for several days! With us there is this as "Greetings from the kitchen".
