Wild salmon fillet on spinach bed

There is a small problem: The photo I uploaded does not reflect how great the taste is! So the following:

Ingredients for 2 persons

  • 2 wild salmon fillets (fresh or thawed)
  • 300 g of original cottage cheese (is low in fat, but very rich in protein)
  • 2 to 3 teaspoons of Dijon mustard to taste
  • about 200 g of fresh leaf spinach
  • 2 stalks of dill (to taste)
  • as well as a few splashes of a lemon and some pepper from the mill

preparation

  1. Mix the cottage cheese, a few lemon splashes, mustard and the dill in a bowl. Season with pepper. Meanwhile fry the salmon on both sides.
  2. Lightly coat a casserole dish with olive oil and then spread the leaf spinach. Place the salmon on the spinach and finally spread the cottage cheese on top. Now the whole thing for about 20 minutes at 180 degrees air circulation in the oven.

As a side dish fits perfectly wholegrain rice and a glass of dry white wine, such as z. B. a good Chardonnay.
