This Hefezopf is just awesome - really Swabian halt - and can be easily conjured by beginners, only courage!

  • 250 ml of milk
  • 160 g of sugar
  • 160 g of butter
  • 1 cube of yeast
  • 3 eggs
  • salt
  • 1 kg of flour
  • Milk or egg yolks for painting
  • sliced ​​almonds and hail sugar

preparation

  1. Take a pot, add 250 ml of milk, 160 g of sugar and 160 g of butter and heat it to about 30 degrees (so you do not burn your finger) until the butter has melted.
  2. Then crumble a cube of yeast, add 3 eggs and a tsp of salt to it.
  3. When the yeast comes in, the mass should not be too hot, otherwise the yeasts will be destroyed! Now it is best to stir in 1 kg flour with the mixer, so that a smooth, smooth dough is produced.
  4. Keep the dough protected from drafts in a warm place for 1 hour. I always do that in the oven - just warm up a bit and then turn it off again - that's the best thing for such a bitchy yeast dough!
  5. A friend of mine wrapped the sealed dough bowl in his blanket and directed the fan heater on it :)
  6. After an hour, the dough would have grown to double - so think of a bowl that is big enough!
  7. Now divide the dough into three equal pieces (weigh it out if necessary), roll strands out of them and braid them together into a braid.
  8. Cover with milk or egg yolk and sprinkle with sliced ​​almonds and sugar.
  9. Then put it in the oven (the braid should not rise too much, so bake it now). Bake at 170 degrees in a convection oven for about 30 minutes, maximum 35 minutes, otherwise it will dry easily.
  10. Allow to cool slightly and enjoy the first piece with butter, honey or Marmalade lukewarm immediately!
