Wraps are juicy stuffed and rolled tortillas. You can prepare them well and they are particularly good for traveling. The variations are great. This recipe is vegetarian and the wraps are especially delicious when wrapped in foil for a few hours and pulled through in the fridge.

ingredients

For 8 wraps:


  • 2 avocados
  • 2 tomatoes
  • 2 bunch of spring onions
  • 5 tablespoons of lime juice (I had the juice of 1 lime)
  • 2 teaspoons of Sambal Oelek (to taste more or less)
  • salt
  • 2 teaspoons olive oil
  • 1 tsp coriander (ground)
  • 150 g feta cheese
  • 8 lettuce leaves
  • 8 tortillas (I always take whole grains)
  • 50 g yoghurt (nature)
  • 1 small or ½ large cucumber
  • Cling film

preparation

  1. The tomatoes are washed, halved and gutted, then cut into small cubes. Remove the avocados from the core, remove the meat with a spoon, place in a deep dish and finely crush. (Fork or potato masher). Now wash the spring onion and clean and cut into very fine rings.
  2. Now add the lime juice, the olive oil and Sambal Oelek to the avocado puree. Add the onion rings and the tomato pieces, then season with the cream of cilantro and salt.
  3. Next, the lettuce leaves are washed and spun dry and the thick ribs cut a bit flatter from the leaves. The goat's cheese (feta cheese) is finely crumbled and then mixed with the yoghurt in a smaller bowl. The cucumber is peeled and the kernels removed. This should be done so the wrap will not be too soft and supple afterwards. becomes. Now cut the cucumber into small cubes and add to the goat cheese yoghurt mixture.
  4. Now you need a pan. In it, the tortillas are seared one after the other. Be careful, not too long, otherwise they will be too hard and break while rolling. Put the tortillas one after the other on the work surface, including one big piece of cling film, and then it's time to fill and roll. First spread some avocado cream, cover each with a lettuce leaf and add some of the goat's cheese and yoghurt mixture. The lower edge is folded upwards by about 3 cm, the lateral margins are cut in a little bit and the tortillas are rolled up tightly with the foil. When you roll the first wrap, you already know how it works. Close the ends of the foil with the foil and put it in the fridge for at least a few hours, better overnight.

Tips

The wraps are very suitable for a picnic or as a "break bread".

They are good to prepare, are good for parties and are great on the buffet.

If you do not want to give up meat, you can add grilled / fried curry and salt spiced chicken breast in small pieces.

You can also use Indian flatbread instead of tortillas.
