Zucchini time is back in the garden. What to do with the many zucchinis?

Here is my recipe for a delicious zucchini carrot.

ingredients

  • 500 g carrots (if possible fresh, not too big carrots)
  • 500 g of zucchini
  • 4 cm of fresh ginger
  • 2 cloves of garlic
  • 5 spring onions
  • 1/4 L vegetable stock
  • 3 tablespoons of clarified butter for frying
  • Salt, curry powder for seasoning
  • parsley

preparation

  1. Peel the carrots with the peeler and cut into thin slices, peel and finely chop the ginger, peel off the garlic cloves and finely dice.
  2. Clean the spring onions and cut into fine rings.
  3. Wash the zucchini well and cut into thin slices.
  4. Heat the clarified butter in a large pan. Fry the ginger and garlic, add the carrots and add the vegetable broth. Let simmer for about 5 minutes with lid.
  5. Now add the zucchini and simmer for another 5 minutes.
  6. Season the vegetables with salt and curry and stir in the spring onion rings.
  7. Sprinkle finely chopped, washed parsley over the vegetables.

tip

The vegetables also taste good if you take nutmeg instead of curry.
