Zucchini and carrots

Zucchini time is back in the garden. What to do with the many zucchinis?
Here is my recipe for a delicious zucchini carrot.
ingredients
- 500 g carrots (if possible fresh, not too big carrots)
- 500 g of zucchini
- 4 cm of fresh ginger
- 2 cloves of garlic
- 5 spring onions
- 1/4 L vegetable stock
- 3 tablespoons of clarified butter for frying
- Salt, curry powder for seasoning

preparation
- Peel the carrots with the peeler and cut into thin slices, peel and finely chop the ginger, peel off the garlic cloves and finely dice.
- Clean the spring onions and cut into fine rings.
- Wash the zucchini well and cut into thin slices.
- Heat the clarified butter in a large pan. Fry the ginger and garlic, add the carrots and add the vegetable broth. Let simmer for about 5 minutes with lid.
- Now add the zucchini and simmer for another 5 minutes.
- Season the vegetables with salt and curry and stir in the spring onion rings.
- Sprinkle finely chopped, washed parsley over the vegetables.
tip
The vegetables also taste good if you take nutmeg instead of curry.
