Zucchini and cucumber bean salad
ingredients
For 2 people
- 1 green cucumber
- 1 zucchini
- 1 medium onion
- pickled sour beans (many recipes on the internet)
- Salt, pepper, vinegar (neutral sprit vinegar), oil (rapeseed oil)
The zucchinis grow in the garden and you may have too much. So you can process them as well:
preparation
- Peel the green cucumber and zucchini. With a little older zucchinis, the shell can be very hard. If the zucchinis are too big (happens very quickly in the garden), then remove the seeds.
- Both grate so that nice slices are formed (not too thick).
- Peel and chop an onion. Put everything in a suitable bowl.
- Now with salt from the mill, ground black pepper, vinegar and oil (not too much) mix everything together and season to taste.
- Only now are the finished sour beans chopped and mixed.
- From the bean stock you give a decent sip in the finished salad, stir again and leaves everything half an hour in the fridge rest (does not have to be).
This can be a dinner in summer temperatures, if you have no appetite for sausage and bread. As a food combining, so no carbohydrates in the evening, this salad is also and you are full.
