Zucchini and cucumber bean salad

ingredients

For 2 people


  • 1 green cucumber
  • 1 zucchini
  • 1 medium onion
  • pickled sour beans (many recipes on the internet)
  • Salt, pepper, vinegar (neutral sprit vinegar), oil (rapeseed oil)

The zucchinis grow in the garden and you may have too much. So you can process them as well:

preparation

  1. Peel the green cucumber and zucchini. With a little older zucchinis, the shell can be very hard. If the zucchinis are too big (happens very quickly in the garden), then remove the seeds.
  2. Both grate so that nice slices are formed (not too thick).
  3. Peel and chop an onion. Put everything in a suitable bowl.
  4. Now with salt from the mill, ground black pepper, vinegar and oil (not too much) mix everything together and season to taste.
  5. Only now are the finished sour beans chopped and mixed.
  6. From the bean stock you give a decent sip in the finished salad, stir again and leaves everything half an hour in the fridge rest (does not have to be).

This can be a dinner in summer temperatures, if you have no appetite for sausage and bread. As a food combining, so no carbohydrates in the evening, this salad is also and you are full.
