Zucchini and mince dish

  • 500 g of zucchini
  • 300 g mixed minced meat, as an alternative also poultry minced meat
  • 150 g of grated Parmesan
  • 500 g of low-fat cottage cheese
  • 2 eggs
  • 1 bunch of basil
  • 1 onion
  • 1 clove of garlic
  • 1-2 tablespoons tomato paste
  • 50 g pine nuts
  • In addition: pepper and sea salt from the mill, a little olive oil and cayenne pepper for the spicier taste

preparation

  1. Preheat the oven to 175 degrees. Brush a baking dish with a little olive oil. Cut off the ends of the zucchini. Then cut into thin and long slices. Stir the quark, Parmesan, eggs and chopped basil together. Then spice up the whole thing well.
  2. Season the minced meat with onion, garlic, pepper, salt, cayenne pepper and tomato paste. If you like you can also add some mustard.
  3. Now add the zucchini slices, minced meat and curds alternately into the casserole dish. Finish with the quark mixture.
  4. Now just some grated Parmesan over it, done. And now the special: the pine nuts! Finally distribute them over the casserole.
  5. The whole thing now at max. 175 degrees convection in the oven. After about 40 minutes, this very delicious casserole should be ready!
