Zucchini and onion boat

Zucchini vegetarian (count per person 1 zucchini)

Halve medium-sized zucchini and fry vigorously in olive oil. Take out and hollow out. Season with salt and pepper.

Cut a lot of onions into strips and brown in oil. Add pureed tomatoes (Tetra Pack) and cook. Season to taste with salt, pepper and fresh herbs. Finally add a lot of chopped parsley.

Distribute the mixture into the halves of the courgette, if you like, sprinkle with cheese and bake in the oven. Approximately 30 min. At 175 degrees (circulating air). In addition flatbread!
