Zucchini apple jam with ginger

A quick recipe for a very tasty zucchini apple jam with ginger, which is not too sweet either!
This is a recipe for all those who may not know what to do with their big zucchini harvest, which I can not really understand, because there are so many different ways of preparing this wonderful and healthy vegetable.
ingredients
- 750 g of zucchini
- 500 g apples
- 30 g of ginger
- Abrasion and juice of a 1/2 lemon
- 100 ml apple juice
- 500 g jam sugar (2: 1)
preparation
- First I washed zucchini and apples and roughly grated (not peeled), the ginger scraped something and finely grated. Then I added lemon abrasion and juice, apple juice and gelling sugar, mixed well and pureed with the blender.
- The whole thing in a large pot (I like to take my pressure cooker) bring to a boil, then cook for 3-4 minutes (according to instructions on the package of gelling sugar) bubbling under constant stirring and immediately hot in prepared, rinsed with boiling water, fill glasses and tightly close with a screw cap.
