Zucchini carbonara with cherry tomatoes, a refined dish that is quickly conjured up on the table.
ingredients
- 1 small zucchini
- about 100 g cherry tomatoes
- about 3-4 tbsp oil
- about 300 g of tagliatelle (or other noodles)
- Salt, pepper, Parmesan
For the sauce:
- 2 eggs
- 1 cup of creme fraiche
- about 1 - 2 tablespoons of pasta water
preparation
- Cut the zucchini into small cubes and sauté in a pan in the oil, quarter the cherry tomatoes and add to the zucchini. Season and leave to stew for about 8-10 minutes.
- Meanwhile, cook the pasta and mix it with the vegetable pulp.
- For the sauce, mix the eggs, crème fraiche and some pasta water well and pour over the noodle pan. Take off the fire and let it stand for a moment. Serve with Parmesan.
