Zucchini carbonara

Zucchini carbonara with cherry tomatoes, a refined dish that is quickly conjured up on the table.

ingredients

  • 1 small zucchini
  • about 100 g cherry tomatoes
  • about 3-4 tbsp oil
  • about 300 g of tagliatelle (or other noodles)
  • Salt, pepper, Parmesan

For the sauce:

  • 2 eggs
  • 1 cup of creme fraiche
  • about 1 - 2 tablespoons of pasta water

preparation

  1. Cut the zucchini into small cubes and sauté in a pan in the oil, quarter the cherry tomatoes and add to the zucchini. Season and leave to stew for about 8-10 minutes.
  2. Meanwhile, cook the pasta and mix it with the vegetable pulp.
  3. For the sauce, mix the eggs, crème fraiche and some pasta water well and pour over the noodle pan. Take off the fire and let it stand for a moment. Serve with Parmesan.
