Zucchini Chili Cheese Salad

This delicious salad can be prepared very quickly:

Ingredients for 2 servings

  • 1 onion
  • 2 medium sized zucchini
  • 1 red pepper
  • a little vegetable oil
  • some pepper, salt and chilli flakes (to taste)
  • 100 g ham cubes
  • 100 g of cheese cubes (eg Cheddar and Samsø (a Danish sliced ​​cheese)
  • some grapes

preparation

  1. First the onion is peeled, diced and briefly fryed on a pan in a little hot vegetable oil.
  2. From the zucchini you remove stem and flower approach. Then they are cut into thin slices, which are cut in half. The pepper is cleaned and cut into small pieces. Then add the zucchini and peppers to the pan, season with pepper, salt and chilli and stir-fry over medium heat, stirring for about 10 minutes.
  3. If the zucchini slices are soft, add the ham cubes and let everything roast again briefly (if you do not like ham cubes, you can omit them!).
  4. Now you distribute the salad on the plates and on top of the cheese cubes and grapes.

Good with wholemeal bread or bread rolls or baguette.
