Zucchini pan with salmon

A few days ago I made a very tasty pan with salmon with a zucchino from our garden. It was easy to make.
ingredients
- 1 zucchini (about 300 g)
- 2 tbsp olive oil
- 1 handful of small tomatoes
- about 30 g tomato paste
- 300 ml vegetable broth
- about 1/2 cup creme fraiche with herbs
- 2 small salmon fillets (TK)
Preparation:
- I cut the zucchini lengthwise (previously cut off both ends, of course) and eroded it.
- I sliced the two halves and braised in hot oil until they became slightly glassy. Then the tomatoes are sliced and cooked.
- Then I poured the vegetable broth into it (water + homemade soup stock) and stirred in the tomato paste and the crème fraîche.
- Finally, I put the thawed salmon in bite-sized pieces on the vegetables and leave everything with the lid closed for a few minutes.
This pan is made quickly and a good alternative to the usual zucchini recipes.
