Zucchini Soup

Fast, easy, inexpensive and healthy, delicious on top of that. With this recipe, I was even able to convince mäkelige eaters.

One takes:

  • 500g zucchini
  • 1 onion
  • 50g butter
  • 2 cloves of garlic
  • about 1/2 liter broth
  • something lemon juice
  • Salt + pepper
  • 3 tablespoons sour cream or crème fraiche (alternatively cream cheese)
  • 1 red pepper
  • dried thyme, maybe some chives

preparation

Lightly fry the onion in the butter, add the diced zucchini with the peel, then the garlic and broth. Simmer for 15 minutes. Then add the sour cream and the spices and crush everything with the blender. Cut the peppers into fine cubes and simmer gently in a little butter for about 7-8 minutes. Over the finished soup, possibly garnish with chives. If you like something more creamy, you can cook 1-2 chopped potatoes.
