Goat cheese on caramelized red onions in puff pastry

Cooking or baking time: 30 min.
Total preparation time: 40 min.

This little vegetarian dish is absolutely delicious! If you do not like goat cheese, replace it with regular Camembert, but what makes me special is the taste of goat cheese.

Ingredients for 2 persons as appetizer or small snack

  • ½ round goat's cheese (Camembert)
  • about 6 big red onions
  • 2 tbsp olive oil
  • 1 tsp brown sugar (or white sugar)
  • 1 tbsp balsamic vinegar
  • 2 rectangular plates of frozen puff pastry
  • to taste: cranberries, rocket, walnut kernels ect.

preparation

  1. First thaw the puff pastry slices next to each other. In the meantime, peel onions and cut lengthwise into thin slices / strips.
  2. Heat the olive oil in a pan and simmer the onions for about 10 minutes. Then add the sugar and allow to caramelise, let it continue to steam for about 5 minutes.
  3. Preheat the oven to 200 degrees.
  4. When the puff pastry has thawed, cut it into squares, (if necessary, roll it out a bit beforehand). Slit at each of the four corners and fold up the edge, press the corners a bit (like little nests). Make the border slightly higher than you can see in the photos, so the cheese can not run out. I happened to a particle.
  5. Now, the nests? filled with a portion of the caramelized red onions, or the soil covered well. (There should still be onions left.) On each ¼ of the goat cheese Camembert is placed.
  6. Bake in the oven and bake for about 20 minutes until the edges have risen and turn golden.
  7. Arrange beautiful and appetizing, give a few of the caramelized onions, with cranberries it tastes very good and looks good too! If you want you can decorate with rocket (also very good in taste) and distribute walnuts over it.
