Since my husband and I mostly work late hours and would like to have something to eat when we get home, I always need recipes that are well prepared and then quickly done. So z. B. this potato noodle soup.

Ingredients (about 4-5 servings):

  • 500 g potatoes floury boiling
  • 200 g small noodle (eg fork spaghetti)
  • 1/2 bunch of greens
  • 1 onion
  • 2 tablespoons tomato paste
  • 1 L vegetable stock
  • 3-4 tablespoons of Grana Padano or Parmesan
  • Salt, pepper, a little oil

preparation

  1. Peel and dice the potatoes, greens and onions.
  2. Fry the onions in oil until glassy, ​​add the tomato paste, lightly fry and add the vegetables. Douse with the vegetable stock, bring to a boil and cook until soft.
  3. In the meantime, do not cook the noodle quite well.
  4. When the potatoes are cooked, remove the pot from the plate and stir in the cheese, then fold in the noodles, let stand for about 2 minutes and serve.
  5. If you boil, just leave the noodles and cheese outside, heat up the potatoes when you want to eat, and then continue as described above.
