Potato noodle soup - prepare well and finish quickly

Since my husband and I mostly work late hours and would like to have something to eat when we get home, I always need recipes that are well prepared and then quickly done. So z. B. this potato noodle soup.
Ingredients (about 4-5 servings):
- 500 g potatoes floury boiling
- 200 g small noodle (eg fork spaghetti)
- 1/2 bunch of greens
- 1 onion
- 2 tablespoons tomato paste
- 1 L vegetable stock
- 3-4 tablespoons of Grana Padano or Parmesan
- Salt, pepper, a little oil
preparation
- Peel and dice the potatoes, greens and onions.
- Fry the onions in oil until glassy, add the tomato paste, lightly fry and add the vegetables. Douse with the vegetable stock, bring to a boil and cook until soft.
- In the meantime, do not cook the noodle quite well.
- When the potatoes are cooked, remove the pot from the plate and stir in the cheese, then fold in the noodles, let stand for about 2 minutes and serve.
- If you boil, just leave the noodles and cheese outside, heat up the potatoes when you want to eat, and then continue as described above.
