Pizza from the clay oven

Today I want to show you how to prepare our pizzas in our homemade clay oven. Of course, you can also prepare the pizzas in the electric oven, then please choose the highest possible temperature, pizza should bake so (roast aromas!) And not dry ;-)

Such a clay oven you can build well yourself, in the net, there are plenty of instructions, even for small clay ovens, such is quite sufficient for a pizza. And since baked at temperatures around 350-400 degrees, this is very fast, only 1-2 minutes!

It is important that the clay oven gets a small roof so that it is protected from rain. After a long preparation phase we decided on a relatively large oven, because we want to bake several loaves at the same time and also fit in a whole suckling pig or a big roast. Finally, a whole bakery has become, with planning permission and acceptance by the chimney sweep. We have a lot of fun and never regretted the effort - our neighbors and friends, are welcome guests, some have built a small clay oven in their garden ;-)

First you start to heat the stove with wood to 400 degrees, it takes about 4 hours (depending on the weather), then you put the embers on one side of the stove, clean the firebrick with a coarse broom / scrubber (photo 2) and water , Then it can go:

We divide the dough into many dough pieces of the same size and put each one in a small lidded box. Then, on the previously floured work surface, a thin pizza shop is rolled out, then comes the tomato sauce, then the cheese and then the ingredients you want on your pizza. In the photo 3, the ingredients are seen, each in an extra potty and already cut to the appropriate size.

Then the occupied pizza shop comes on the slide and is transported with a small push in the oven. Then you have to turn the pizza always slightly so that the heat of the laterally stored embers can act evenly on the pizza. Depending on the heat, it takes 1 - 2 minutes.

We always start with a classic margarita, every guest gets a little piece. Then everyone is allowed to make their own pizza or we do it with the desired ingredients.

I deliberately refrain from prescriptions, but my two favorite pizzas (see photos) I explain briefly:

  • Pizza with feta cheese, fresh figs, acacia honey, chili flakes and pine nuts.
  • Pizza with Italian fennel salami, in combination with mushrooms, peppers, cherry tomatoes, possibly chili and artichoke hearts.

Very good tastes also a very special pizzasalami from beef, she is very thin. Actually you can combine a lot, just give it a try.
